If I remember, only two bolts have to be removed to get the gas pedal out of the car.
The throttle cable can be removed easily from the pedal so you can work on it at the workbench and eventually bend it a little more if you need
This often happens with thicker carpets too...

If your not feeling like pulling it out here is a pic of a way to shorten the cable a little bit which will open the carb more. Just pull the cable a little attach a zip tie and trim it off and release. A bit bubba but you can always remove it when you feel like doing it right.

No, Bubba would have crimped a beer cap from a PBR long neck on there with some vise-grips....
thats how we got rid of the dead spot in the 2001-up mustangs was that way. because the cable would pull before actually doing anything the fix was the put a spacer of some sort inline such as a zip tie.
