What is the difference between a single pole 30amp and double pole besides 10 amps? I see they come in different flavors but was curious of the advantage of a double pole over a single pole or what additional use it has.
A single pole is just a simple on- off switch. One wire feeds from the source of power, the other goes to whatever you want to turn on/off.
A double pole can control 2 separate things independently of each other- power too. Like 2 switches that are side by side and only have one handle to operate it.
The relay coil is the handle.

The amp rating is how much current the switch contacts can handle without sticking together,

I could be wrong but the single pole relay will route the input to a single output whereas the double pole relay will route the input to 2 outputs. If you are just wiring a fuel pump relay the single pole should be all you need. The double pole relay is probably rated at a higher amperage due to the multiple outputs.
