It would be no louder than not having mufflers. I have a chambered exhaust system and it is fairly loud I have no mufflers and the sound is a deep, throaty at idle When I step on it, it definitely turns heads.
I looked in to this for a while but I ended up going with side pipes instead. You don't want to go with the cap off ones because it would be a pain to switch it back and forth every time you want it to be quiet. You will want it quiet at some points especially when you pulled up next to a cop car at a light. Also since the cut outs are close to the front the fumes will be coming up and making you light headed if you’re standing still or reversing so you are going to want to close it at times. I would know all this because I had my mufflers and the converters off last week when I was switching to side pipes. Believe me about the exhaust smell; it made me side to my stomach and I would have to hold my breath to back into the garage. It is extremely loud to the point of being to annoying and this is all coming from a 17 year old high school student. You will want quiet, believe me. Also you don't want to buy the ones with the wires that manually close it off because they have a reputation of opening up on their own when moving, unless you want to be holding the wire shut the whole time while you’re driving. The best but not the cheapest way to go is with electric cut out. Let us know what you are going to do.
Like to go with the electric cut out set-up, my local exhaust shop said they'd do the install then I'll need to bring it to Mr. Wire to do the switch...

You would probably be better off putting in a good quality undercar exhaust, assuming you dont want side pipes, with performance mufflers. The cutouts are just going to be noisy they wont have the deep bass sounds you would get from a good exhaust. Just my 2 cents.
We had a young lady with a BOSS 302 (that she and her boyfreind restored!) at the Historics a few years ago when Ford was featured. It had a set of the Hooker electrically activated ones just behind the headers. They worked great and didn't leak, although the whole car was brand new. I don't know how they would hold up in the long run...
My roomate has them on his car, they've been on there for a few years and don't leak yet, a lot of them have replacable o-rings so if they start to leak it will cost you $10 and some time. And to the comment that under car sounds better I would disagree. I think both can sound good but open headers just sound crazy. They sound different from one but its fun to have both. thats my 2 cents
