Default electric fan set up

Need advice on electric fan set up for a zz502/auto install. i have two 12" 1360 cfm spal fans and a 3 core alum radiator. I live in south florida so heat is an issue. It will be for street use. Which relay harness should I use (painless etc) and at what temp settings.

Delta Current Controller is what I run, the FK-50P controller:

I talked to the Spal folks at SEMA and saw this controller. I put one on my car and really like it. You can choose when it turns on and off plus there are relays provided. On my 383 a/c vette in Texas I have one fan come on at 180, the second at 200. The engine always stays in that range. When the a/c comes on, both fans turn on. Good Luck.
