Default where do I stick this thing?

I have the new radiator all wired up and mounted except for one little thing, the temp switch.

I was going to put it in the head, but I will be damned if I can get the pipe plug out...heat didn't work.

I also can't find any thermostat housings with a 3/8npt hole for a 68 chevy big block.

any suggestions?

You could drill and tap a hole in a spare water neck.

Hole size for 3/8 - 18NPT is 9/16".

Buy a thermostat housing for a 79 Corvette at AutoZone. It has 2 holes tapped into it - 1 can be used for a heater hose and 1 can be used for a temp sensor. I'm working from memory here but I was able to plug in a temp sensor for an electric fan into a 79 thermostat housing and run a heater hose also. If that is not correct there is defnitely a way to use that housing for a temp sensor.
