I just picked up another vette (1980) and the drive down the highway home was scary at minumum. Anyway, i did notice when i accelerate the cars pulls left bad. Could this be the power steering valve balance. Once you hit a cruising speed it wasnt too bad to keep straight but dont hit the gas hard, whoa!!
You really have to examine the entire suspension system and drivetrain to see where the problem lies. It could be a combination of things. You can check the steering system easily enough by raising both front wheels, starting the engine, and seeing if the wheels turn one way or the other by themselves.
My 72 had really worn trailing arm bushings plus a differential yoke that was missing a C-clip. It used to head for oncoming traffic every time I stepped on the accelerator. There could have been other issues also but I ended up rebuilding the entire suspension so I can't say for sure.
