Most of the guys doing LS swaps are buying low mile salvage motors and going from there.
Motors-trannys-pcms for a third of the price of a crate motor in some cases.
Makes a lot of room for upgrades.
A good fuel injection unit alone for a Sbc/Bbc is gonna start at $3500.00+.
So it really is about what you want and how you want it.

is it safe to say any thing that makes 500+ hp is the goal!

When im looking at build choices i look at a 5 things

#1 Reliability!!! (hate having to constantly tweak and work on)
#2 HP/Trq (rolling at 40mph dropping down a gear and smoking the tires)
#3 cost.. Dollar/per Hp/trq (biggest bang for the buck)
#4 Street manners..(is this thing going to idle at 5grand to stay running?)

Last but not least
#5 gas mileage/gas cost am i going to have to run 110/114 or pump gas @ about 5mpg....

i belive the ls- series are Great engines with outstanding hp/trq/strength/and Gpm.. But my Nod goes to the the BBC..
