When I get home from Afghanistan I am going to be putting some money into the '68. I am focusing more on suspension and brakes, but a little more power would be nice too. The engine is a 327/300, but the engine was rebuilt about 5000 miles ago with 327/350 spec pistons. I was looking at the top end kits on summit and wanted to know if anyone had any experience with this kit. Then engine is stock, except for the 327/350 pistons. The main thing I am worried about is the cam. It will be driven on the street.
A 327 with mods will not keep up with a crate motor like a zz383. So instead of you spending a couple of grand on beating a dead horse it might be better to make a new game plan.

If it is the original engine for your Vette I would bag it and save up for a crate motor. The cam in that kit is probably a bit big but rear gears will help.

If you want to stay with the 327, build the engine as a high revving engine. So you'll want parts that make it do that, and then have the gears to make it move at low rpms. Chevy made a screaming 302 at one time....and to this day it's quite feared. Just most people don't want to rev an engine to 8K to get to the power band.
Otherwise, go with G's advice and bag it. The topends are nice if you don't want to have to mix n match, but they usually leave a person wanting to change something in the kit (diff cam, diff heads, or diff intake, etc)
