Default AC wiring question 76 C3

In the process of restoring my 76 C3; the only thing I haven’t done was pull the body off the frame which I think is not necessary. The engine compartment is highly detailed and painted looks really good. I pulled the AC out of the car because it was a mess from the previous owner and it would have been too expensive to repair. Added an AC delete cover with new heater core, rebuilt the heater box. My intent is to keep it as close to factory as I can get.

Question - I'm replacing every stitch of wiring from the firewall forward. I have the new headlight harness and looking to see whether I should install an AC wiring harness and cut it down - or install a non AC wiring harness. I restored the entire console/clusters and added a brand new heater/AC control in the interior because I couldn't find a non AC control and was told it's not offered new. One could obviously tell this car was an original AC car just by looking in the interior - aside from the vents being different on an AC/non AC car.. I’d like to post some pictures of my progress and will do so this week.

Again - should I go with new AC or non AC wiring harness?
