Default Does Diff need to come out?

I'm changing the gears in my 75 this week and am wondering if the diff needs to come out completely or can it be done without. Does it need to be on the bench to change gears? Also the plate on the bottom sits right up against the exhaust, will I need to cut the exhauste to get it out, if in fact it does need to come out. Going from 3.08 to 3.55. Thanks in advance.

Yes it needs to come out.

Not sure of your exhaust setup but the camber plate if that is the one you are talking about can be removed without taking the exhaust off. You should be able to slightly lower the exhaust and get the diff out. A lot depends on how your exhaust is routed.

Anything can be done, but it would be a lot easier to cut the exhaust (if its necessary and I doubt it is) than to try and install a gear set with the diff in the car.
