Man this sounds bad. When I bought my vette, I got online and found some guys in my area with old vetted. They turned out to be a great bunch of guys that know a lot about these cars. They have been very helpful as well as fun. They give very good advice. They also like to laugh and we all get along very well. I hope you can have as good luck as much as I have. Go to a car show, they will be there. Talk to they guys with nice cars that are not done with duct tape and bailing wire...
for some reason the term mafia comes to mind......the owner of the company that did this to me is head of the local corvette club. I see them at every show because they host 99% of them in this area. I am in southern indiana and no matter where you go they all say talk to "_____corvette" thats all they do. But i am going to goto some events in louisville and see whom i can meet.
O yes and as for the timming i assume it is set where it should be starts with one pump when cold and no knocking under load...(so i guess the correct answer to your question is that i have no clue)
go to a drag strip and talk to the guys with small block chevys, they know how to go fast and make power. dont take your go-fast advise from guys who sit by there cars in a lounge chair and polish it all day. Talk to the gearheads who crave horsepower, they might be able to point you in the right direction.
Because of the amount of money you have spent with these guys, I would take my car back to them and require them to make it right. Especially if they are the heads of the local car club. It sounds as if it is still under warranty, so make them fix it!! If they refuse and insist on you paying for more services, call BS on them and let them know that you are going to file a complaint with the BBB and the car club. As has been suggested, find some gear heads and trouble shot this ahead of time so you know what you are talking about when you take it in, then have them address the problem. It could be an easy fix to make the car drivable to your liking. I had an experience with a Corvette Shop in Dallas that took to weeks and could not produce an estimate for a rebuild of my engine. I found a couple guys through referrals who dropped in a 330 horse GM crate in my 74 and I could not be happier. It lights the tires in first and second with my 410 gears with 4 speed. Just sayin.

You should have bought a junk motor off Graig's list or a wrecking yard for a core (100$). Someone at that shop is driving around enjoying all your hard earned money in parts, you can bet on it. :
