Just picked up a 75 that had be in a garage for 10 years.
Check all fluids
Drain all the old gas, add Carb. cleaner and about 10 gallons of fuel.
This will help with any old gas problems. By doing this first it gives the new stuff time to work while you are doing everything else.
Shoot some WD-40 in the cylinders and wait an hour.
If the oil is clean then I'd start the engine with the old oil, if not change it. If it's low on oil I'd add a quart of ATF to the crank case and top off with engine oil.
Manually rotate the engine. Rock the car while in gear or a socket and breaker bar on the crank bolt.
Remove fuel line from Carb, disable the distributor.
Using a catch can to catch the old fuel crank the engine over.
Hook up the gas line and crank it over.
Inspect the gas for floaters, remove and install new filter or as in my case add a fuel filter to the system. Make it a large one to start with.

You'll want to change the oil because water may have formed from condensation inside the engine. The water will be at the bottom of the oil pan and the oil will appear good, until you start it and it all mixes together.
After you run it, if the new oil still appears to be clean, I wouldn't bother changing it again.

So you could simply drain some oil to remove the contaminants.
Like they do to the fuel tanks on airplanes in their pre-flight.
