I recently purchased a 1969 roadster and love it! On the original window sticker, it lists as an option "power vacuum brakes" but there is no power brake booster installed. Is the brake booster a different option than power vacuum brakes or can this simply be it may have been removed at some point? Thanks, Dan

No. "Power vacuum brakes" required the booster.

I agree. A distinct possibility.
The power brake option required different hole drilling in the firewall for the booster which non-power cars did not have. If your car had the booster at some time in the past, you should see evidence on the firewall where it was mounted.
I'll have the shop doing the restoration check for evidence on the firewall. I cant recall, but I thought at least a partial vin# is on the window sticker, which should match both the vin on the windshield stem and engine block. The vin on the block is authentic, not machined and restamped and matches the stem.
