Well, I was able to get the vette about as far as the first time driving home after the fuel pump install.
Had one episode shortly after heading for my destination (approx. 10 mi) and was immediately able to restart (in neutral as before). Continued on my way and experienced a "stumble" (check engine light came on briefly) for which I DID NOT even have to put in N and restart, just held down the accelerator pedal and engine picked right back up.
Then made it approx. 1/2 mile when I was forced to pull over. Engine was running about 150 where I was able to get engine to start, however unable to get very far before engine stalled again. One good thing is since the Check Engine light flashed, perhaps now the computer will have a code for us??
Had towed back to mechanic and informed him of my inquiries here. Based on what info I had, I am leaning towards it being a vacuum issue (gonna first check all fuel related hoses) and replace the fuel filter. My mechanic is a good friend but his time can be limited. I REALLY need my vette back!!
So, I am back here to help save him any unnecessary time. He's the best mechanic and knows GM cars. Just maybe not all the "little" things that pertain specifically to my vette. I do not believe this is an electrical issue, due to the timing when it is experienced.
If all else fails try this, I have seen HEI rotors short out alowing the coil to ground out into the bottom of the distributer, killing the motor. Pull the cap and check under the rotor. It will look normal from the top but you may see burns on the bottom.
The check engine light also comes on when power to the ecm is cycled to let you know the light works.
Perhaps you are having intermittent power to the ecm. Check the connections to it, if the same as an '81 it's behind the seat in the battery compartment. Start the car, and wiggle the plugs on the ecm....see if it stalls.
I had that happen twice. I found the connector going to my distrubutor was barely making a connection due to the retainer clip being broken.. I put a new end on it and never had the problem again.
and the winner is..... 81PILOT!! I just KNEW it. Wasn't exactly the clip, but was wire issue in cap. Also, it seems the plug wires must be rerouted... show some melting.
Thanks again to you ALL for EVERYTHING! I will be cruisin by the weekend. :o)

Awesome, I am glad was all it was, nice to find an easy fix once in a while!
