Electric Fan for Radiator question?

I have tested my fan with a direct 12v connection and all works well. I have put in a new sensor and checked all wiring connections. There are no issues with the engine overheating as all reads well on the temp gauge; however, the electric fan never comes on. I don't know if the engine temp ever reaches a level to trigger it or not. I have not run the vette in the summer months yet with A/C (I live in Florida), but the temp has been around 80 this winter and I have put a few long rides going to and from weekend destinations and everyday driving. Maybe I don't have a problem, but it is nagging at my brain and I don't feel secure not knowing it if the electric fan works or not. I have an '82 completely restored (by me) and running fine with no problems what-so-ever otherwise.

Does anyone have viable suggestions to lessen my concerns?

the stock cooling fan won't turn on until the temp reaches 227*. I've never had my '81 ever get that hot so it's never turned on either.

Your fan is operation per GM design.

Hell, turn on the a/c that fan should take off full speed....if it does, don't worry about it,
