Since just about every other car I've owned has had a rock steady idle, I'm wondering what this engine is supposed to idle like.
The engine is supposed to have a 1969 300hp cam.
start with basics, are the points burnt, are the cap and rotor burnt, are the plugs good, are the plug wires not beyond resistance limits, if points good are they set for 30 degrees dwell, is the timing correct, and lastly are the mixture screws and idle speed screw correctly adjusted. After that check for a vacuum leak.
Engine sounds good to me. Your tach needle looks to be jumpy instead.
the tach needle wiggles around more quickly than it would/should with a lopey idle. That was my first impression when I watched the video. Check out the tach and cable.

Yep, its a Chevy...valve tap and all and it seems to coincide with the needle jumping. Have you had the valves adjusted?
Other than that is seems ok. If its an auto trans, put it in gear and let us hear it
