A 600 should work just fine if it's a mild build, street-only car. You'll get good throttle response from a smaller carb, but give up a little bit on the top end, it's worth it, makes the car fun to drive.
On the other hand, big radical cam, high rpm engine, high numerical diff gear, high stall converter? Yeah, drop a 750 on that thing and let her drink!
Here's an article from Car Craft where they comment on several different carbs, one of which is a QFT Slayer (750 cfm version) and they seemed pretty impressed by it. Lots of advanced features normally only found on much more expensive carbs, replaceable air bleeds, stuff like that. If I wasn't such a cheapskate, I'd probably go with one. (I'm more into swap-meet 1850s and 3310s)
