As far as I know, all the C3's used a pushrod system, not a cable. I'll assume you just haven't taken it apart far enough to see that yet. To remove the pedal assembly, you need to remove the steering column and instrument cluster. Once they are out, it is fairly obvious how to remove the pedal assembly. There are two bolts that are accessed from the wiper compartment in front of the windshield. The others are accessed from under the dash. Once the pedal assembly is out its a simple matter to replace the clutch pedal. You may also be able to weld the pin back on the pedal.
Remove 4 bolts in this plate. Do not remove rivets.

I just completed the repair of the clutch pedal. Here is additional information.
Remove the seat
Remove the steering column - 2 nuts at rag joint, 2 nuts on firewall, 2 bolts holding column (remove last so you don't damage the bearing). Unplug the piano electrical connector and two connectors (black/rear must come out first, then the white one)
Remove 4 nuts holding the brake booster ( use a u-joint)
Remove 2 brackets under the dash.
The clutch/brake assembly is held by 4 bolts in the cowl (front end), there are 2 rivets holding on the plate, do not remove.
