Non A/C cars usually have the standard duty clutch fan and A/C equipped cars have the heavy duty clutch fan.
The number of blades and the pitch, diameter and cord (distance from leading edge to the trailing edge of the blade) control how much air the blade is capable of moving.

I can tell you in 78 the Corvette cars without A/C got a standard thermostatically controlled fan clutch that engaged at 180 degrees. The base cars (L-48) with A/C got a heavy duty thermostatic fan clutch that engaged at 185 degrees and the L-82 cars with A/C got a thermostatic fan clutch that engaged at 190 degrees. All info from the 1978 GM service manual.
