My 78 has been setting for 8 years. I will be going through the complete brake system and was wondering is flushing the old brake fluid out would be the ideal move? Also, is there a video or instructions out there that details the proper way of bleeding the brake system on a C3?
I would suspect that things may be gummed up quite a bit in your master cylinder. At the very least I would change that and definitely flush the system with new fluid from an unopened container. Be sure to bench bleed the mc prior to installing it on the car.
There may be some videos out there but there is plenty of information to be found here on the forum. Good luck and post questions as they arise.

I flushed mine using gravity feed method. I drilled a hole in the top of a clear water bottle, and inserted a rubber tube into it, and connected it to the bleeder valve. After opening it up the old brake fluid will start to fill up the bottle.
With the top of the master cylinder off I had to occasionally check the level to make sure that it did not empty the bowl. I kept topping off the rear or front level depending on which brake I was bleeding.
this allowed me to work on another part of the car and flush the brakes at the same time. But the warning is not to let the fluid get so low that air would get in the system, and the master cylinder would have to be removed and bench bled.
