The hub stays when the rotor comes off. The two were riveted together at the factory. If the rear rotors have never been removed before, you'll have to drill out the rivets. There's a lot of good brake (and other) info at http://www.corvettefaq.com/brakes.asp
It's not too likely, but if the rotors are very difficult to turn, your brake shoes may be adjusted too tight. If that's the case, you can rotate the rotor until you see the star wheel through the adjusting hole and then loosen the shoes up.
If you're getting the rotors turned it may not matter much, but I've read that it's good to mark the rotors location on the hub (mark a lug & the rotor) so that you can put the rotor back on the same way it came off. I think it was supposed to reduce the risk of runout.
