How do you remoce the side yokes on the diff to change the seals? I have the Diff on the bench, but can't see the "C" rings which I think hold the shaft in. Does the pinion shaft and gears have to come out first?

You don't need to remove the pinion shaft at all. How much play is in the side yokes? If there is more than about 1/4" then it's likely that there ain't no c-clips, they've been ground down. The c-clips are about 1/8" to 1/4" from the tips of the end of the slined shaft of the yoke. They should be up against the inside edge of the posi case.
If the clips are gone, chances are that the ends of the yokes have "mushroomed" and you'll have to either drive them out of the case, or grind off the ends to get them out. I prefer the Big F'n Hammer method myself. Once the yokes are out, you should be able to pry out the old seals and lightly press new seals in place.
