If your '68 is going to be a daily driver I would go back with stock parts.
I take it your car will be mainly used for weekend cruises and some light spirited driving since you are currently looking at restoring the suspension with factory replacement components. With that in mind, I would recommend using good quality rubber bushing, ball joints, rod ends, etc. from MOOG. Something I highly recommend before diving into the suspension of one of these cars, especially if you are going to start modifying it is read this article: http://www.corvettefaq.com/c3/vip.pdf
There are a few upgrades you can do to improve the handling and steering without resorting to poly bushings, which will increase NVH.
Sway Bars
Front sway bar - stock
Rear sway bar - none (or factory 7/16" matched to a 1 1/8" front)
Replace the bushings that locate the rear differential crossmember. These are essentially part of the suspension and affect rear toe if they are in bad condition.
Reduce rear camber change by using a new camber bracket such as this. The rear camber curve was designed for bias ply tires and radials don't need as much camber gain. This will also reduce the jacking affect of the rear end, which is also a good thing. You'll need to use some adjustable strut rods with a bracket like this.

If you're rebuilding front and rear for less than 2k, you are doing very well. Especially considering you said "everything new". I spent over $200 just for new nuts, bolts, and washers for the rear alone. I assume you are rebuilding TA's and diff yourself?
