Default 1981 keep stock/modify?

Been struggling with a decision since I've purchased my vette. It is a 1981 stock 350 with 4 speed. It still has all the original engine componets except for a rebuilt rochestor quadrojet. The exhaust is stock and sounds like a "vega". It runs ok but I know it could run better. My dilema is I'm thinking off removing/disabling all the computer/emission componets and installing: Edelbrock carb and manifold, new headers and exhaust with no cat and decent sounding mufflers, and whatever other components that are necessary for this to work. There are no emission standards where I live so that is not a problem. One big reason for doing this is because I can't find a decent shop/mechanic who knows squat about vettes or quadrojets. I can however install and maintain the above mentioned componets. I drive this vehicle daily during our short Alaska driving season. If any of you have advice on this I'd sure like to hear it. Thanks in advance  :flag

I can't do much to the 81 here in Calif...but mufflers, small cam, etc...as far as computer...everything runs off it. Carb, dist, etc A short course in emissions will tell you which rob you of power, which you can eliminate, etc...but have fun !!!
