I have a zz4 350 motor in my 79 vette. I currently have a street avenger on it now. Is that the best carb for this engine? I live close to New Orleans and we have very high humidity most of the time. Not sure whether that makes any difference or not.

A carb meters fuel/air into the combustion chamber. Any brand of carb can do this when properly tuned. So your question might be is my carb big or small for the engine? If your street avenger is 600-850 cfm in size, then it should be suitable. Small blocks like higher than factory initial advance. You may want to tweak your timing curve for more performance and then fine tune your carb.
I am currently looking into installing one of the FITech fuel injection units
The new ones bolt right on like a carborator and tune themselves based on your driving....
I currently have (and had for the past 10 years) a 650 Holley Street Avenger for my small block 350. I only had one issue with it when I first installed it. Sent it to Lars (here on the Forum), he overhauled it and sent it back. It's been working perfectly since then!
