I am in process of removing my door lock from my 1979 vette, but am looking at the back side within the door and I am not sure what to take off to get it out. I have not seen picture like this on internet. Please help.
I have done this job twice. You would probably be wise to get a NEW outside seal that goes between the lock and the door (that protects the paint). Order a couple in case you tear one, or need to do the other lock.
This last paint job on my '72 convertible, I removed and filled in the door lock holes....WHY lock a convertible?? really....I even removed the inside ***** just in case, not figgered out what to do with the stubs there yet.....
FWIW, based on my experience doing this numerous times and on several cars, you’ll be well-served to bring your “patience tools” with you for the lock’s re-install. Tight quarters and the need for more than two hands can frustrate. The spring pressure needed to re-install the lock-to-body clip can be a bugger.

I lock my Convertible when the Hard top is on. I do use my HT as I do drive year around and I like the look.

I hear you, I have the locks, easy to spot the hole from inside and redrill if anyone want to.....but I used to have the hardtop to the car, from back when it was burgundy....and it hung from my FLORIDA garage ceiling for many ears, finally decided to sell it, it's a yankee thing, not needed here.....
