I suggest grounding the negative side of the coil rather than cutting the power side to shut down the ignition. If the thief has any automotive sense he will check for power at the coil and can easily supply it with a jumper to the battery. If you ground the negative side of the coil no triggering and no spark.

Years ago I used a headphone jack. I shorted the two legs of the jack and had a quick disconnect on my key ring. I installed it next to the cigarette lighter. I would pulled the headphone jack and take it with me. It essentially disconnected the wire on the distributor.
