I have had to cut out the bolts on the rear body mounts on my convertible 68. Question is, how do I now go about repairing the lock nut that broke loose inside the body?
Are you referring to the cage nut inside or the reinforcement in your picture? The cage nut is is riveted to the body inside of the rear pocket. To get to the rivets the reinforcement in your picture will need to come out or you can use a large neoprene washer, a steel washer, and a nut. I'm not too familiar with the convertibles but I think it is easier than a coupe model to get to the cage nut.
Yes the cage nut is attached on the top. It is riveted to the fiberglass. To get to the rivets you'll need to remove the reinforcement underneath the car which is not that difficult. Looks like yours may need some attention, either cleaning and painting or replacing it if it is rusted out.

I've just come across this thread at a time when I've been talking to a friend about the #4 body mount on his car, specifically a rusty cage nut and/or bolt. Assuming the bolt unscrews from the cage nut, it it possible to "simply" replace the bolt without the need to lift the body etc?. And were the bolt to break, or the nut be beyond hope (!), is it feasible to replace the cage nut with a suitable "ordinary" nut?
Yes, it's nothing special, it (and most) were caged so they could have the bolt installed from underneath without needing someone else inside holding the other end

TLDR
If I knew, I would have found a 1-1/2" inside tube and put it right over the cage and may not have sheared the rivets. Run a chaser up through the net and put in a new bolt.... hindsight

I didn't want to lift the body so I needed to modify the mount on one side in order to slide it in place. If you look near the bottom of the thread I posted above it shows what it looked like
