Make sure the flanges are flat is the biggest thing, then gasket wise I personally like the dead soft aluminum (taylor seal-4-good used to be percy) which have a little forgiveness, or if the flanges aren't great the newer taylor xx carbon have worked very well.

With a stock cylinder head or stock exhaust port.....use the 1404 Fel Pro graphite composite. SCE and Mr.Gasket make a version of this too.
The Percy's gaskets work...but are a Band-Aid for bent flanges or beat up heads....I just don't like the way they look installed.....it looks like a Band Aid....
Using ARP stainless 12pt header stud kit is the best plan.....MUCH less apt to loosen up. I recently put a 12pt stud kit on my Hedman headers and they have not loosened up.....before it was a crap shoot every 100 miles or so......

the key for a long lasting header gasket is insuring that the bolts do not come loose. I've had mine (side pipes) for 10 years and have yet needed to change the exhaust gaskets.
They make locking header bolt kits.
This is the one I used and have never had a bolt come loose. It will take some slight modification to some of the locks to get them to go in place, but not very hard with a grinder.
i drove the car a couple times and then re-tightened the bolts after each time, then installed the locks.
If you decide to go this route, the bolts are both 6 point (twelve point would have been better) and allen wrench in the center. Careful with the allen wrench hole they are always easy to strip out. Bolts are stainless, use antiseize on them.

gaskets mentioned above are all good especially when everything is flat and smooth. the very best gaskets i have found when your flanges are not in great shape is by a company called Remflex, they are about an 1/8" thick and work great when your flanges are not perfect. they are not cheap but they work.
