Support the ends of the tray and place a weight on the high point. Using a wallpaper streamer, carefully steam the underside until you start to see movement. Monitor this movement carefully to avoid the tray bending in the opposite direction. Have some smaller weights ready to switch out as necessary. Be patient. Apply the stream uniformly as possible, ensuring you are streaming the full extent of the bend and not over applying it to one area. Once you feel you have achieved the original profile, place a support under the tray at the point of the weight and let it sit for a day or two to see if it retains the profile. You may have to repeat the process, adjusting as necessary to obtain the desired results.
