Hey guys in my 79 the pop up on the left side is like shifted back towards the car so when you open it it gets caught on the bumper and it’s caused me a nasty chip. Every time I try to use them the back of the headlight covers just barely gets caught on the bumper. What do I do? Is there an easy fix?
Well I don't know how easy it is. But adjust your headlight door forward. Assuming of course it's hitting on rear edge.
hitting on the bumper would be a really interesting trick.
But I think I know what you mean. There are 3 bolts on each side of the pivots. You loosen them and adjust. There are stops for how far down, how far up, and these 6 bolts to adjust tilt and forward, aft fit.
perhaps read your factory service manual on headlight door adjustment.
And yes there a real bugger to get perfect.
Hardly any room for adjustment..very tough to get to bolts but doable.
i would first look to worn out bushings etc..and the potential for loose or missing bolts.

Also take a look at the front surround support bar where the headlight frame attaches the 3 bolt at the rear of the assembly. This bar is prone to rust/corroded along with the headlight frame causing the whole assembly to sag down causing interference or rubbing of the headlight assembly and body.
My passenger headlight chipped the hell out of the surround, it was the whole headlight bucket that was broken. Your bushings are probably worn out, and it's jumping around.
It took me a while to replace, and I ended up rebuilding both with all new bushings etc. from Corvette Depot (When they had local pickup, Uggghh)
It cost a few bucks, but was well worth it, they now work perfectly.

Yeah it is sagging down farther then the right. How do i go about replacing that? Or is there a way to fix it?
It's all adjustable. There is a adjustable stop for the down position. Loosen the lock nut, turn the bolt and you can adjust how far down the door closes. There is a up stop. The 3 bolts on each end of the hinges allow you to adjust forward/aft and twist.
Have you considered purchasing a factory service manual?
Worth its weight in gold. Much, much better information than watching videos. Or perhaps a combination of the two could help you.

If it headlight frame is rusted it can be replaced. But if the steel header support bar is rusted the only repair is to remove it and install a new one The bar is secured to the fiberglass with adhesive not an easy job.
