Default What's this part for?

It has two names. It's listed in Corvette Central catalog, pg 22 PT#183004, and is called a frame shield. A pair of them hang over the frame in front of the #2 body mount.

Chevrolet Corvette Restoration Guide, written by Lindsay Porter, calls it a mounting pad. Pg 89.

Does this help center the body back onto the frame. Is it protection from exuast? Do I need to spen $20 for a pair before I put the body back on?

If you are talking about the triangle shaped pieces that fit between the frame, wheel well, and fender than yes, you need them. They keep the wheel well and fender from moving around and keep dirt from filling up the under side.

No, I've got them. These look like inverted "U" shapes that slide over the top of the frame.
