I have been using a set of Hedmann headers on my 427 and they fit perfectly without any modifications with a hammer. I had a set for a 1970 LT1 engine and they also fit like a glove despite only having P.S., P.B.. They slid right into place and worked like a charm.
Ceramic coatings are a kind of tricky thing. If your engine is already running and in the car then you have no problem. The people who make the ceramic coatings will void the warranty on a set of pipes with ceramic coatings used on a new engine that is yet to be broken in. The extra friction/heat that you get while breaking in a new engine can cause excessive temperatures that can damage the coatings.
I use high compression in my 427 and the coatings burned off the first 3-5" on each tube because of the higher temperatures that the extra compression makes. I was told to order a bare set, fit them and then send them off to get them coated in a Higher Temperature rated ceramic coating. The NASCAR guys run higher compression than I do and their exhaust systems have to look good for the pictures. I was told that it would be between $200 and $300 to simply coat the new headers and 10 days turn-around. (Before COVID).
I would wait and see the responses from people with the same year and engine as you do. That would be the most accurate way to find what works. I am partial to Hedmann because of my prior experience with them and how long they have lasted on the Corvettes.

I am running Stan's Tri-Y ceramic coated on my 79 L82. He's no longer in business but I thought I read somewhere that one of his employees purchased all his jigs and was continuing on but I can't find anything. Quality is absolutely perfect. Maybe somebody has an update?
I may have been misinformed but am woundering why you want both stainless AND coated headers.

Stainless for long lasting durability & ceramic coating for heat protection from engine. would also replace exhaust with Stainless tubing.
