(71 coupe) The wire going to the engine temperature switch has an insulated covering on it from the wire bundle (near the alternator) to the sensor. There may be other places that I haven't found yet in the engine compartment that have it also. Like all 32 year old cars, the covering is really deteriorated or missing. Is there a source for this material? Any suggestions or recommendations are greatly appreciated.

Home Depot also has some insulation that paints on like nail polish that can be used in certain instances where the boot has worn out. I've had a difficult time finding some of these old connectors.
Do a search for ceramic sleeve insulation or electrical insulation and you will see many choices. THe ceramic sleeving is $34-230 at 1100 degrees farenheit protection for 100 feet, depending on the size of the lumen. :)
I've had great luck with stuff like this from McMaster. Always quick delivery, excellent support online and phone and cheaper than the auto parts suppliers.
