Are the seats in a 79 the same as in the 81 ? I'm pretty sure they are, but what would I look out for ?
Also, if I needed to dye from Doeskin to Red how would it match with the current shade of red?

They are basically the same but a power driver's seat option was introduced in 1981. That did not exist in 1979 and the wiring is not in place to operate it. Some 29,200 of 40,606 1981s produced had that option so it is quite common.

1979 had the same seats as the '78 and previous, unless you have the optional "Indy" seats. Those "Indy" seats were made standard in the 1980 models.
There are some differences in them. Take a look at a Ecklers or Mid-America catalog in the section for new seat covers. There is a size difference in the side bolsters on some of the deep bucket seats.
That is correct. The Pace Car style seats became standard in 1979 but there were differences in the bolsters. Some are 2 1/2" and some 4". I do not recall when the changeover occurred. Best to measure if in doubt.
For example this is a 4" bolster. It makes for a deeper looking seat than the 2 1/2". Otherwise the overall fit of both is the same.
ALL '79's had the later style seats. The seats actually came out in '78 Pace Cars and I believe Anniversary editions. In other words, all 1979 through 1982 seats are the same with the exception of colors and bolster sizes.
