Different combinations of engine, trans, gearing, car weight, etc., work better with different springs so there's no one answer for all situations. The goal is usually to get the advance in as soon as conditions allow so I'd just start with the lightest springs and test drive it. If you get pinging or other problems, move up to the next heavier springs. You can mix the springs also, using a light with the next heavier one to get the right combination for your particular application.
Keep in mind that the springs only affect the rate of advance, not the amount.
Basically what he said. Drive it and listen. If you have a balancer that's marked, or an advance timing light, you can run through the revs and look at where you are. 34-36 degrees, in as early as possible, without pinging, is best.
Your curve kit should come with instructions that outline what color springs will do what for you. But this is only a guideline, as engines differ.
