Best street carb for a SMB is a 650CFM. With quite a bit of fiddling the 750 should be ok but not great. Biggest mistake made since wheels were mounted on cars Installing too large of a carb. Same mistake made over and over again by old farts and soon to be old farts
Have to know more about your heads and intake but I am running the Performer 750 mech on my 383 stroker. I slapped it on right out of the box and it runs great until I get above 5500 rpm then it sort of runs out of steam - will have to play a little with the jetting. I love this carb, it does not put out the hp that I had with my Holley 750 mech dp but I don't have any problems with it leaking either.
The Edelbrocks are vacuum secondary's so for most street driving you'll run on the primaries only. The 750 may be too much in that case, because it will have 375 cfm up front vs 300 using the 600 carb. That makes the air flow and signal kind of weak and make metering difficult.
The Q-Jet and some Holleys are spread bore, with much smaller primaries making them more street friendly.
