My closed chamber heads have chambers just over 100cc, so you could very well be up against the same thing I was. As for how much to mill the heads to reach 11:1, any good shop that specializes in head work should be able to give you that info.
I'm currently shopping some AFRs for my other toy & need to talk to the local head guru soon anyway. I'll run your situation by him for you. I can tell you that he doesn't believe that the gains in a slight compression raise will be nearly as significant as going to an open chamber design even w/ a drop in compression- I had that discussion w/ him already when researching what to do for my Vette last summer. I bought new closed chamber heads anyway because I didn't think that a big cam & a drop from my 9.5:1 ratio would work well together. I'll update you after I talk to him.
