In preparation for the Demon Carb and RPM intake, I first want to make sure the ignition is set properly. I installed a nice set of MSD 8.8mm wires. Next, I want to install a high-performance HEI unit, to replace my stock HEI. I'm looking at the MSD 8365
Would this be a good choice? Should I get mechanical or vacuum advance?
Your stock HEI is as good as any aftermarket unit avaiable. As long as your HEI unot is in good working order, then save your money to spend on something else.

But isn't the stock HEI anemic after 4500rpm? I want to stay with an HEI setup. My plan is to either upgrade the stock unit or buy an aftermarket HEI. I need a unit that will perform to 7,000rpms.

Not at all. A stock HEI distributor will run to 7000RPM all day long, the only one that say they are weak are the people trying to sell you a different one. I have hundreds of entry level race motors running stock HEI distributors with no problems. On a dyno, up to 7500 RPM a Stock HEI distributor will make as much power as any other ignition available. Just because it is not made by an aftermaket company with a big advertising campain doesn't mean it's not a good piece.
I am running the same distributor and like it!!! It is both vac and mechanical advance but comes with a bar to lock out the vac advance if needed. I chose this dist for the ease of setup on the curve and total timing. It also comes with limiting bushings that worked well for the setup I was looking for. Yes, your tach will still work!!!
It is a little spendy for price but it is nice...
You can keep your stock HEI and go with a MSD coil and a 6al box. The multiple spark discharge is not just marketing hype. When I changed mine to this setup I could feel it in the seat of my pants when stepping on the skinny pedal.
