Just a last comment since I seem to always go counter to the performance crowd. If you go side pipes don't fool about with those JC Whitney pieces of junk. Get some real pipes and enjoy what they really were. And buy some ear plugs.
The third vette I ever rode in was a blue '69 with offroad exhaust. I was approximately 5 years old. I can remember my dad pointing the pipe & cover out to me and telling me never to touch it. I didn't touch it. I'm sure if you are very serious with your kiddos about it being hot they will not get burnt.
As far as "Should I get sidepipes?" Well... Personally I think they are bad-****. They sound incredible and look downright mean. The thing about performance has never officially been put to rest on the forum as far as I am concerned. Should you choose to go with the original style sidepipes (chambered) and covers, again, they will sound incredible. BUT, people here on the forum say that they are not good for performance.
I want to see a dyno slip or something proving the chambered exhaust is not good for performance. Then again, you could go with the hooker sidemounts with JCL's... folks say that is a pretty good performance exhaust. The only problem is the freakin $1,300 price tag.... but if you get original style side exhaust you're not going to get in for much cheaper than that.
*edit* I should say original style but with fiberglass covers instead.
Don't do it. Very loud and the burn factor is greatly increased for your friends and family. You may only do it once but they forget!!!
I recommend a good under chassis system with spintech mufflers. They sound great and flow great. Just my two cents worth.

It's a personal preference issue. Mine was originally equipped with them (long gone by the time I got it), but I liked the SCCA look that the 68-69 racers had so I made my own that hook to the stock manifolds. Basically 4" pipe with a 2.5 glasspack in the middle. Enough poeple ask about them from time to time that I will go ahead and upload the series of pictures to my web site below in the next day or two. They sound awesome, IMHO, and I'll never go back...
These have a mellow sound compared to the Hookers, but are not a performance addition with the stock manifolds. Stahl makes the sidepipe headers I want, but they are close to 1K un-coated. They get hot, but I'm the only one that has been burned on them (once!) to date. I'm very careful about warning my kids and spouse as the get in and out!
The picture was taken right after I painted them. I put the car on a rack and put the pipes on a pair of tall stands. Then I just played with it 'till I got it where I liked it and welded on 2 mount tabs on. they bolt flush to the frame with a shock grommet for an insulator. At the intake end I welded on a header collector and then mounted them to the car. My local muffler shop then fabbed up the short pipes to the manifold and welded them to the collector fo $80.- out the door.
