Anyone recommend a good gasket for headers at the cylinder head and where the collectors meet the exhaust system? Both have been blown on on my car and now I have leaks and popping.

I fitted copper gaskets (from Summit) between the Headers & Head & have never had to touch them since. Probably find that Aluminium ones will do just a good a job.
Honestly: two FLAT surfaces and no gasket with some Ultra Copper.
I went through just about every gasket they make, had the surfaces trued and put a thing bead of ultra-copper on.
Not a single leak all summer, without even re-tightening a single bolt.
I've also had good luck with the copper ones. Even if the header bolts work loose, they don't blow out and you can re-tighten them and be back in business.
I replaced mine a couple years ago and have not had any leakage and have only re-tightened them once. Can't remember the brand, but they are multi-layered soft aluminum. I bought them at Schucks, if I remember correctly.
