I'm figuring that while I pull my intake and Carb I might as well replace the thermostat while I'm at it. What temperature one is stock? Should I replace it with stock or a hotter(colder) one?

There were various temp t-stats used. The newer ones 73 and on used 195's for emissions, most others were 190's. Check the book on your model for recommendation.
I would recommend a 180 for overall operation. It will open a little quicker and not allow too much heat to build. However, once a t-stat opens the engine will an operating temp unless your cooling system can handle the heat and track the t-stat. The real key is the condition of the vette's cooling system.
The t-stat does not effect the cold start operation. It does effect how fast the engine warms up.
i had a 180 and replaced it with a "stock" 195 (79). engine seems to warm up a little faster and really seems to run and idle a little better. every engine is different i guess.
before i owned my vette, BUBBA had took the t-stat out all together and it actually ran ok, but when i put one in (oem 190-195) my car would overheat big time, so i put in a 4-core radiator with some fabricating of the supports and now it runs great...except for the donut leaking situation, doh.

If the system is operating properly the t-state controls
1-when engine coolant passes to the radiator
2-the minimum running temp.
IE, If your system likes to run at 200 degrees traveling down the road, a 160, a 180, a 195 would all be wide open.
