I own a 1980 Vette with the stock alloy wheels. They are in need of a serious polishing. I've admired everyone else's for too long now. Any hints on how or what to use to shine these up.

If they still have the factory clearcoating, strip it off. Then, depending upon what condition they're in, go buy sticks of polishing rouges (they come in various abrasion strengths), and polishing wheels (I use 4" wheels which fit my hand drill). Start with the coarser grits and work your way to the finer/polishing ones. Then, once you're satisfied with the shine, consider spraying them with a clear sealer, available in rattle cans from your local auto parts store. I picked up the rouges at Home Depot.

Oh, and you might want to wear old clothes and eye protection while you're running the drill...

Alternately, check into having them chromed, if you're into that look.
