Normal oil pressure?
I so know nothing about engines 
What sort of oil pressure should I be seeing? idling? cruising at 70mph, flooring it?

Depends on temperature.
Cold idle should be high 50s-60+, warm idle will be 45ish, hot idle could drop into the 20-30 range.
Anytime your foot is on the gas, the pressure needs to be over 50psi, when you floor it, it should be close to 60 or above.
