It kind of depresses me that we have lost the multitude of engine choices that of which were available in the C1's through early C3's. would it have been that hard to de-tune or stroke the LT's, granted i know with everything electronically controlled these days its not as simple as just dumping a bigger engine in. But would it not be nice to have a few more options for engines than just the regular vette and the extremely expensive ZR-1 (just as an example). ....or am i just ranting over nothing?

84, you had one choice - the Crossfire
85 and 86, it was the L98 (but the General did give ya' alumn. heads midway through 86)
87, it was the L98 again but you could check off RPO B2K and get a Twin Turbo 5.7L engine.
88-91, same as above however, in 1990 the LT5 engine was also added to the mix, allowing for 3 choices in power plants
92-95 was the LT1 or LT5's
96 was LT1 or LT4, your choice - transmission dependant
I believe that in 1987, you could also order a Corvette without an engine - I thought I saw the RPO for this once before - anyone have it??

for an additional $20K
I know what you're saying, in 1969 the Corvette had a choice of 5 engines, 4 transmissions and at least 4 different rear end ratios. These days car manufacturers brag about the number of cup holders.

It's the price we pay for being politically correct and environmentally conscious.
It costs mega-bucks to certify an engine. Most manufacturers thing one or two engines available in each model is enough to pay for.
