I purchased my 1990 3 months ago and it already had a wood dash trim kit on it. I like it and don't plan on removing it - mostly because I am too lazy to jack with it and I think that it looks nice. I added a travel buddy cup holder (the factory ones suck) and an info center cover. I could go either way on this issue - Pureist Resto or Custom. My interior is Saddle, but here are a few pics:

While this may be a kind of noobish question, what is creating that corvette logo and name in the second picture? Ive never seen that screen in person before, is it a cover?

Yes, it is a clear plastic cover. You just press it in the hole in the dash trim over the info center & it is held in place by friction. They have a few different logos & logo colors. I purchased it from Ecklers Corvette. I think that it was around $20.
