Over the last year I have seen a number of cars with over 100,000 miles and some as high as 180,000. At what point on a 95 or 96 vette would the odometer roll over back to 0, or will it keep going into 200,000 - 300,000 and higher?

The mileage would keep going like you say...200,000-300,000-and so on. It will show the added miles until the CCM quits working. Replace the CCM and you get new miles and a flashing SYS light. Unless you replace the CCM and ECM/PCM that match.
The odometer displays 6 digits with no tenths so you could (theoretically) get to 1 million miles when it would roll over to all zeros.
The CCM controls the odometer display and as long as it's working, it will display the mileage as recorded.
When the CCM is replaced with a new unit, the existing mileage has to be entered using a GM scanner before 100 miles roll up on the new odometer. After that, the new CCM will not accept any programming and the odometer simply shows whatever is there after that. I don't think that the ECM makes any difference in a CCM replacement other than the required handshaking between the two units.
The CCM also has to have the VIN entered along with data elements for certain options. The CCM holds trouble code data for ABS/ASR, FX3 and some other options. If that information is not entered, there would be no way to get error codes for these systems.
