I'm finishing up the last stages of the build shown below in my signature. I have 3" collectors on my headers, and 2.5" Borla XR-1 race mufflers.
I'm deciding on cats right now....I'm not too worried about the enviornment due to my lone vehicle's performance exhaust, but I am tired of trying to find an inspection place that will pass my car without legal exhaust. I'm looking at the cats --- I'd actually prefer a test pipe, or something that would pass visual inspection to save both money and the minimal amount of power you lose to a cat. But I'm looking at both sides. How does an inspection place do a visual inspection? Would a test pipe even truly pass? How do they know that a cat is a cat?
What cat would you suggest if I do infact buy a true cat? It seems the magnaflows are about the cheapest, but even their "spun" cat 3" in and 3" out costs a 100 bucks a piece and says only supports up to 5.9 liter. My 383 will be a 6.3 liter. Will I need one with AIR?
Out here they use a mirror on a long handle to see the cat, and yes they can spot a test pipe easy. Magnaflow/carsound is a cheap cats that flows real well, they are cheap. www.performancepeddler.com

A cat (either the car part or the animal) is is not a danger to your manifold.
I just have lots and lots of random cat (the animal, not the car part) pictures that I like to post as often as I can.

Carsounds are the cheapest. $50 for a 2.5" and $60 for a 3". They're bigger than bullet cats though. If you're running an X-pipe make sure they fit in there before it.
You could have a hard time passing the sniffer with "fake" cats, so you might as well use real ones and bolt in test pipes the rest of the year.
Look these guys up: www.pypesexhaust.com I saw their high flow cat at a show and it looks well made even with a shield. It's so small. Comes in 3" to slide onto your collector. Price is resonable. On their site hit "mufflers" and scroll down to cat.
I bought from performance peddler, magnaflow bullet cats "spun cat" research it, the one i have flows 540 cfm each and i have 2, have not installed yet though.
The thing I like about these is that they look just like the precats that are on the car now, and will be installed in the same place in the system. Just for some info, I priced a set of RT cats, and they were $200.00 each.
BTW, it seems to me that your combo is making so much power that the cats should not make any real difference?
