Quick question here... How Hot can the coolant and oil get before it's time for me to begin to worry? What temperature?

If either get in the 240* range, it's time to shut the engine off. I start sweating when mine gets to 220*, but that's just me.
At 240* you can figure the fans are on or not....either way not good. (main fan 227* and aux if equiped 235*).

Owners manual says if oil temp reaches 260* to shut it off.

Just a piece of advice... When asking a question, it's easier if you include with the question, your car's year. It's quicker than looking it up on your profile. I see that you have an 88 and L98's inherently run hotter than say an LS1. Running 220 in your car is not a problem as that is how they are designed. It's an emissions thing.

over 235 and I start to worry. But that's just me. Typically my 89 runs 215-235.
