What I usually do is use 5-30 then as the engine wears, say 100k miles, switch to 10-30. I live in a climate that is not hot all the time though. A hot or cold climate may affect your choice.
The oil needs to meet the GM4718M specification, the only Mobil 1 that I could find that says on the bottle that it meets that spec is the 5-30. The penzoil platinum in 5-30 and 10-30 meet it. Those were the only ones that I could find that meet the spec.

I've just started switching my higher mileage vehicles to 10W-40.
Just changed from 5W-30 to 10W-40 in my truck and it quieted down.
Aardwolf - you probably know this but not much difference in 5W-30 and 10W-30 - once warm they are the same weight so you are only seeing slightly thicker oil when the engine is cold.
